Loved by guests and team alike, particularly our head chef James, the recipe is deeply personal, created by Margriet's mother, who has spent more than forty years perfecting her croquettes. Earlier this year, she joined James in the kitchen to pass on her method, from creating the perfect filling to achieving that crisp, golden finish. It was a lovely moment of shared knowledge and culinary tradition, and one that feels very much at the heart of what Old Town Bistro is about.
